Homemade Cosmic Brownies

If you’re a Disney fanatic like me, you know that everything tastes better when it’s shaped like a Mickey head, and these homemade brownies recipe are no exception. If you’ve ever been a fan of the original cosmic brownies, aka Little Debbie Comic Brownies, you’re going to love these delicious Disney treats! No need to go to the grocery store for these chewy brownies, with a few ingredients and some rainbow sprinkles, you’ll never buy store-bought brownies again!

Cosmic Brownie Recipe

So let’s get started. This simple recipe is absolutely the best way to tame your chocolate craving for the huge 90s childhood favorite. They will not only take you on a trip down memory lane, but these chewy brownies will start a new generation of fans, impress your friends, and will steal the show any time you make them!

There’s no corn syrup like many brownie recipes, not that that means they’re healthy by any means, but every little bit helps, right? Because there’s coffee in the brownie batter, you may want to limit eating cosmic brownies to earlier in the day. No one wants their kids bouncing off the walls at 11p.m.

Ingredients:

  • Unsalted butter, softened
  • White sugar
  • Brown sugar
  • Large eggs
  • Fresh brewed cooled coffee
  • Pure vanilla extract
  • Hershey Cocoa powder
  • Instant espresso grounds
  • All purpose flour
  • Cornstarch
  • Baking powder
  • 4 inch Mickey Mouse Cookie Cutter
  • Semi sweet chocolate chips
  • Heavy cream
  • Rainbow Chip Sprinkles, typically found in craft stores like Michaels but you can grab them here.

Get started by preheating the oven to 350 degrees and prepping a 12×19 cookie sheet with Pam spray or different brand non-stick spray. Then cover the pan with parchment paper to prevent sticking, this little trick helps keep the parchment paper in place.

Using a large bowl, beat the butter, sugar, brown sugar, whole eggs, coffee, and vanilla until combined and fluffy. In a medium bowl, whisk the cocoa powder, espresso grounds, flour, cornstarch, and baking powder. Then gradually beat in the dry ingredients into the wet ingredients.

Spread the brownie batter onto the cookie sheet evenly, then bake in the oven for 22-26 minutes or until a toothpick in the center comes out clean. Allow the brownies to cool completely to make cutting the shapes easier and cleaner.

Using the Mickey Mouse cookie cutter, cut out 12 mickey mouse heads and place onto a wire rack to harden a bit while you make the dark chocolate frosting.

Add the chocolate chips to a medium bowl, then in a small pan, bring the heavy whipping cream and instant espresso grounds to a simmer. Pour the warm mixture over the chocolate chips, melting the milk chocolate. Whisk the melted chocolate until it’s smooth to make rich ganache.

Carefully pour the creamy ganache slowly over the Mickey Mouse shaped brownies, smoothing with a rubber spatula and making sure the tops and sides are completely covered. This makes it easier to place chocolate chips over the whole surface of the chocolate brownies.

Here’s the fun part… sprinkle the rainbow chips on the top of the cooled brownies, and allow the ganache to harden before enjoying. Oh boy!

How to Store Brownies

To maintain the chewy texture and keep the frosting intact, you’ll want to store the brownies in an airtight container at room temperature for the best results. Plastic wrap tends to stick to the ganache and you’re not going to want to give up one bite of the thick chocolate frosting.

If you have leftovers, these brownies will last for up to a week stored properly.

Can You Freeze Brownies?

Yes! These brownies can be frozen for longer storage. I recommend freezing them without the chocolate ganache and adding it once they’re thawed to maintain the best texture and flavor.

Wrap each brownie tightly in plastic wrap, then place them all in a freezer safe zip top bag. Remove as much air from the bag as possible before sealing. These brownies will last for 3-4 months stored in the freezer.

Brownies

  • 1 1/2 C unsalted sweet cream butter, softened
  • 2 C sugar
  • 1 1⁄3 C brown sugar
  • 4 large eggs
  • 6 tbsp fresh brewed cooled coffee
  • 4 tsp pure vanilla extract
  • 1 1⁄2 C Hershey Cocoa powder
  • 2 tsp instant espresso grounds
  • 1 1⁄2 C flour
  • 2 tbsp cornstarch
  • 1 tsp baking powder
  • 4 inch Mickey Mouse Cookie Cutter

Chocolate Ganache

  • 2 C semi sweet chocolate chips
  • 1 C heavy whipping cream
  • 1 tbsp instant espresso grounds
  • 2 - 4 oz bags of Rainbow Chip Sprinkles
