Mickey Lemon Shortbread Cookie Recipe

As the temperatures rise, nothing is more refreshing than a big glass of lemonade. This light lemon shortbread cookie recipe is the perfect snack on a warm summer afternoon.

The sweet and tangy shortbread cookie will be a family favorite. The kids will enjoy helping by kneading and rolling out the dough, then cutting out the Mickey head shaped cookies. It’s the perfect boredom buster and a great way to teach children kitchen skills.

Mickey Lemon Shortbead Cookies Recipe

While the recipe makes 3 dozen cookies, if you use a larger cookie cutter or the dough is rolled thicker, it may make less. Luckily the recipe is super easy to add to when needed. I cut mine in thirds for my family and it was perfect.

Ingredients

  • 1.5 cup Butter, softened
  • 1 cup Powdered sugar
  • 3 tablespoons Lemon juice
  • 3 cups All-purpose flour

Icing:

  • 1/2 cup Milk
  • 3 tablespoons Lemon Juice
  • 1 cup Powdered Sugar

Instructions

1.Preheat the oven to 325 degrees. Line two cookie sheets with parchment paper.

2. Add butter to the bowl of your mixer and whip until smooth on medium speed.

3. Add the powdered sugar and lemon juice to the bowl and continue to mix on low until thoroughly mixed. Scrap down the side of the bowl as it mixes.

4. Add the flour and mix until well blended.

5. Knead the mixture with clean hands to form the dough. Pat the dough onto the wax paper.

6. Roll out the dough with the rolling pin until it’s about 1/4″ thick.

7. Place the Mickey Mouse cookie cutter on the dough, push down, and give it a small wiggle.

8. Repeat until all the dough is used.

9. Carefully pick up the Mickey head shapes and place them in the parchment-lined cookie sheets.

10. Take the excess dough and roll it together and repeat steps 5-9.

11. Bake for 12-15 minutes until the cookies are a slight golden color. Don’t leave them in long enough to turn brown.

12. Remove the cookie sheets from the oven and let the cookies cool completely.

13. While the cookies cool, make the lemon icing.

14. Use a spoon to spread the icing in a circular motion. This helps make three circles out of icing.on the Mickey head cookies.
