The first thing we want to do is remove some of the moisture in the pumpkin puree so our pumpkin pie rice krispie treats aren’t soggy.
Line a cookie sheet with paper towels and spread a cup of pumpkin purée out over the top. Then cover the top of the purée with a few sheets of paper towels.
Let it sit for about 30 minutes. This will remove a majority of the moisture.
In a large pan or pot over medium heat, melt butter slowly, making sure it doesn’t burn. Once the butter is melted, add in the marshmallows.
Continue to stir the marshmallows until they are fully melted and incorporated into the butter.
Once the marshmallows are completely melted, add in the pumpkin purée, pumpkin pie spice, and cinnamon. Mix well.
Add in the rice cereal and mix.
Once everything is incorporated, transfer the marshmallow mixture from the pot to a greased, 13×9 baking pan.
Using parchment paper on top of the treats, press with a spatula to flatten.
If you want to add sprinkles, go ahead and add those now.
Once cooled, cut into squares or a fun pumpkin shape.
